Jack in the Box makes some wonderful mini sirloin burgers, but they also serve up mini buffalo chicken sandwiches. These are easy to make, and perfect for a party, a tailgate celebration, or even any night for dinner. Be sure to use Frank’s Red Hot Sauce to make these sandwiches spicy, Frank’s Red Hot sauce is what Jack in the Box uses, and it is one of be best hot sauces around.

1 package heat and serve rolls

buttermilk ranch salad dressing

Franks Red Hot Sauce

iceberg lettuce

chicken nuggets

Prepare the chicken nuggets as directed on the package. Cook the heat and serve rolls until done. You will want to use 1 chicken nugget for each roll. Split open the rolls, on the bottom bun coat with buttermilk ranch dressing, and then put the chicken nugget down on the bottom bun. Add about 1 teaspoon of Frank’s Red Hot sauce to the top of the chicken nugget and then top with iceberg lettuce and the top bun.

Becky’s Diner is located in Portland, Maine. Becky says that the quality of the bacon is the key in this sandwich. This is a popular sandwich among the breakfast crowd. Bake the bacon in the oven to help keep the grease away from the bacon. Use bacon that is dense and smooth for the best results. She uses the natural peanut butter that you need to stir the oil into before spreading.

6 slices thick-cut bacon
2 slices study bread (white or whole wheat)
2 Tbsp. thick, smooth peanut butter

Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Lay the bacon on the baking sheet. Bake until done but not overly crisp, about 20 minutes. Drain on paper towels.

Toast the bread and spread 1 tablespoon of the peanut butter on each slice. Lay the bacon on top of the peanut butter on the common slide, top with the other slide of bread and serve.

1/4 C. Mayonnaise
8 oz. Frozen Spinach (thawed, rinsed, and completely drained of all the liquid)
1 Tbsp. Brown Mustard
1 1/2 tsp. Prepared Horseradish
1/4 tsp. Salt
1 1/2 tsp. Roasted Garlic
1/4 tsp. Sugar

Whip cream cheese, add mayonnaise, mustard, horseradish, salt, garlic and sugar. Spread cheese mixture on flour shells. About 3 tablespoons for each shell, depending on the size. Sprinkle 1/8 cup of spinach on cheese spread. Place ham near the edge and then the Swiss cheese on top of the ham. Begin rolling shell. Wrap rolled shells in plastic and let set in the refrigerator for several hours until set.
The rolls may be made the day before and be kept in the refrigerator for several days if sealed. When rolls have set and keep there shape cut into 1/4 inch slices. Arrange on tray, garnish with pickles or cherry tomatoes.
