Garlic Aioli is so often featured in many restaurants, it is a favorite of ours because it is so wonderfully pungent and creamy. We put together this garlic Aioli, and used it to dip fresh vegetables in, and as a dipping sauce for freshly grilled meat. Mayonnaise is easy to make, when you use a mixer, and it tastes so much better than anything you can buy. Consider making your own fresh garlic aoli at home.

2 eggs

3 cloves of garlic minced fine

1 Tbsp. freshly squeezed lemon juice

1 tsp. ground white pepper

1 C. peanut oil

Combine all ingredients into blender and and puree, slowly stream in oil so it will emulsify. Season to taste with more salt and white pepper if desired. Keep refrigerated, and this will last for 2 to 3 days.

2 pounds broccoli
3 tablespoons olive oil
3/4 teaspoon coarse salt
1/4 teaspoon ground pepper (I enjoy mixed peppercorns and my favorite grinder)
2 tsp lemon zest
1 tsp minced roasted garlic in olive oil

1)-Preheat oven to 450 degrees. Trim 1 inch from stems of broccoli. Using a vegetable peeler, peel outer layer of stems; cut diagonally into 1/2-inch slices. Separate florets into bite-size pieces.

2)-In a large bowl, toss florets and stems with olive oil, salt, and pepper.

3)-Spread in a single layer on a rimmed baking sheet; roast, turning broccoli halfway through, until tender, about 15 minutes.

2 Heaping Tbsp. minced garlic
3 Tbsp. lemon juice
1/2 cup Italian Bread crumbs
1/2 cup fresh ground Parmesan
3/4 tsp. Thyme (important)
Lemon Pepper

Mix the bread crumbs and parmesan in a large bag. Shake the chicken in it to coat. Save the extra crumbs.
Melt the butter in a baking dish. Add the Garlic, Thyme and lemon juice. mix it up.
Lightly lay each breast on it’s front to get moist then flip over in the pan. Sprinkle with remaining crumbs to recoat. Shake some Lemon Pepper on top.
Bake 40 min @ 400. Spoon some of the left over liquid over the cooked chicken, and over your accompanying side dish. I prefer a type of rice, like pilaf or brown. The smell and the flavor will knock you down.

Thanks cheezew for sharing this chicken recipe.

This recipe was one I tried back in college. Being a poor college student and not having a lot of money you try to be inventive with recipes. This book the Frugal Gourmet said was reminiscent with what the ancient Romans may have had for dinner. This recipe is simply pasta, garlic, and eggs. It really is quite good.

1/2 lb. pasta your choice
2 eggs, beaten
2 tsp. olive oil
4 cloves garlic
2 Tbsp. freshly grated Parmesan cheese
Salt and pepper to taste

Put the pasta onto boil in plenty of salted water. In the meantime, heat the oil in a small frying pan and add the garlic. Sauté just for a moment and then add the eggs and cheese, cook the eggs until done. Drain the pasta and toss all ingredients together. Salt and pepper to taste.

Whole chickens are an inexpensive way to cook dinner. This recipe is one you can experiment with and try out other spices and herbs once you get the technique down for making compound butters. Compound butters are often served in nicer restaurants, but they are very easy to make. A compound butter is where you mix butter that is at room temperature and you mix in other herbs and spices. This is a very easy way to make something simple taste very delicious.

4 Garlic clove — minced
6 Tbsp. Butter
1 tsp. Salt
1 Tbsp. Black Pepper
1 broiler chicken — split in half

Blend first four ingredients. (I do it in my food processor). Spread butter on chicken halves. Broil four to six inches from heat for 13 to 16 minutes per side, basting frequently.

5 Medium Russet Potatoes ( wash and scrub potatoes, the peelings are left on)
1/2 – 3/4 C. Milk
1/2 tsp. Salt
3 Tbs. Butter
1/2 tsp. Ground Fresh Black Pepper
1 Whole Garlic Head (measure out 1 1/2 tsp of crushed garlic after the roasting process)
1 1/2 tsp. Olive Oil

After washing potatoes, rub potatoes with softened butter and place in a 375 degrees oven until potato is soft, when checked with a fork. The potatoes should take about a 1 – 1 1/4 hour. To prepare garlic cut the top of the head of garlic off so you can see garlic cloves with out any peelings covering them. Spoon the vegetable oil on top of garlic and wrap in foil. Place in oven while baking the potatoes. Garlic will take about 1/2 – 3/4 hour. Garlic should be soft and golden in color when finished baking. When garlic is removed from the oven cool slightly and squeeze soft garlic from head. Depending on the size of the cloves it should take about 4 – 5 cloves. The crushed garlic should measure out to be 1 1/2 tsp. More garlic may be added for the hearty.

When potatoes are done chop slightly and place in a large mixing bowl. Add salt, butter, pepper, and roasted garlic that have been mashed and measured. Add 1/2 cup milk. Beat with a electric mixer until fluffy. There will be little chunks of potatoes that will not be completely mashed. The small lumps and peelings will give these potatoes a hearty flavor.
If potatoes seem to be to dry add little more milk.

These potatoes will be a hit. They really are a great change from those same old French Fries with that favorite cut of steak.

Bennigan's may not be around anymore, but you can still cook up their famous garlic mashed potatoes at home.

Many of the Bennigan’s went out of business in 2008, and are no longer around. You can enjoy their famous garlic mashed potatoes still.

1 lb. Red Potatoes
3 Tbsp. Butter
1/4 C. Half and Half, or Milk
4 cloves Roasted Garlic

To really get their flavor, these potatoes need to be baked, not boiled. So bake them in a 350-degree oven for about 20-30 minutes. This would be a great time to roast that garlic too. You can either use a traditional roaster, or you may wrap a bulb of garlic in foil and roast that, be sure to coat the bulb with some olive oil before you roast it. Remove potatoes from oven and allow them to cool. You can leave the peelings on or off; I like to leave a few of them on. Chop potatoes, add butter, and half and half, and mix with an electric mixture. Add cloves of garlic, and salt and pepper to taste. You will want to heat these potatoes in a saucepan until they warm up again.

Take potatoes out of boiling water and drain. Peel most of the potatoes, make sure you leave about one fifth of the area not peeled. Place potatoes into bowl with other ingredients and mash the potatoes. I would not use an electric mixer; you do not want to take all of the lumps out, if you do, just be careful not to totally mash the potatoes. Makes 4 servings.
