Stuffed Yams – light and healthy yams that taste wonderful.

Are you ever looking for something that is light, healthy, and filling?  This is a variation of a recipe i got from wai lana yoga.  Wanted to add a little more spice to mine.
2 medium yams
1 Tbsp. butter
1/2 Tbsp. fresh thyme, chopped
2 Tbsp. fresh chives, chopped
1/4 tsp. salt, or to taste

Spinach Salad – a tangy twist to the old fashioned spinach salad.

If you like and have the time, make the dressing in the morning. The longer it sits, the better it is. Wash your spinach ahead of time. Makes for easy preparation later. You can also do the grilling early. That way, all you have to do is mix it all before serving.
