This recipe was a restaurant original given to me. This is for the full restaurant portion of this dip. Consider cutting back this recipe for a smaller crowd.

1/4 Lb. Sun dried Tomatoes
1 lb. Green Onions, cut in 1/4 inch slices
3/4 lb. Mushrooms, cut into 1/4 inch slices
1/2 gal. Mayonnaise
1/2 gal. Sour Cream
3/4 lb. Asiago Cheese, shredded

Reconstitute sun dried tomatoes in hot water. Clean, rinse and slice green onions. Rinse and slice mushrooms. Squeeze water out of the tomatoes, then julienne into fine strips. All water must be removed from the tomatoes and they must be added last or the cheese dip will discolor. Combine all in food processor, except tomatoes. Blend well at low speed. Mix in julienne tomatoes slowly. Makes 1 1/4 gallons.

1/4 C. shredded Cheddar cheese

1 lb. Kroger Nice and Cheesy (or any other store brand “Velveeta”)
1 Tbsp. butter

It is excellent with tortilla chips, Frito’s as well as used to put over scrambled eggs and burritos.

2 lb Loaf of Velveeta Cheese
2 Cans of Rotel Tomatoes and Chili’s (desired degree
of spiciness)
2 Small Cans of Diced Green Chili’s
1 Can Diced Jalapenos (optional)
Approx. 1-2 TBSP Garlic Powder

Dice the cheese and put in a large saucepan. Mix in all cans of chili’s and tomatoes at one time. Simmer over low-medium heat till cheese is melted and everything is mixing nicely. Stir in the garlic powder. If this seems a bit runny from the juices, you can put in a TSP or so of cornstarch to thicken the dip. This gets better each day it is refrigerated.
