Many of us are going to be getting for the July 4th weekend. For so many of us this means getting together with friends and family and enjoying their company around an outdoor grill. Grilling up hamburgers and hot dogs, steaks, veggies, and other goodies is certainly the way many of us pass the holiday. We will highlight many of our favorites that so many of us enjoy over the years. We like to plan out our menu with items that typically will be on sale during this weekend. For us that means stocking up on extra soda, potato chips, a brisket or two, and a few other goodies. Here are a few recipes that will be making an appearance at our table sometime over this weekend.

Better than KFC Cole Slaw – we love this recipe, you can make it a day or two ahead of time and enjoy it when you like. You can use pre-packaged shredded cabbage to help save time, or you can buy fresh cabbage and chop it up yourself.

Kenny Rogers BBQ Sauce – this goes well on either chicken or beef. Best of all you can make this recipe ahead of time, and use it when you are ready.

Jell-O Poke Cake – This can be made as a double layer cake or you can make this as a 13 x 9 rectangular cake. We suggest that if you are feeling festive you can use a red and blue Jell-O for patriotic colors.

We had recently spent a long weekend in New Jersey with several trips into NYC. I had the pleasure of taking one of my dearest friends there, and meeting with my favorite Russian family. I was fortunate enough to get one of their Gefilte fish recipe, so be looking for a recipe for gefilte fish soon. I have a couple of pot luck dinners coming up, so I know what I am serving up. We also did manage to have some cheesecake at Junior’s, of which we have a recipe for here. It was excellent to have a New York Style Cheesecake in New York City. We also had hot dogs at Nathan’s. It certainly feels like we ate our way across Manhattan. We look forward to sharing more of our visit up there with you in the future.

Have a Happy and Safe Holiday Weekend!

The CopyKat Crew

This is an old Ukrainian recipe. It goes excellent with any meal. It can be frozen up to 3 months…or stays good in the fridge for a week.

1/2 – 3/4 C. sugar
1/4 tsp. salt
2 Tbsp. Lemon Juice
2 Tbsp. white wine champagne vinegar
2 Tbsp. Miracle Whip (Do not substitute)
1/2 10 oz tub sour cream
3-4 garlic cloves
1 head cabbage
1-2 leaves red cabbage
3 large carrots
3-4 green onions
3-4 celery stalks

Rub salad bowl and the inside of the lid with all of the garlic cloves(save garlic).
Cover bowl and let stand in refrigerator as long as possible, over night is best.
Shred all of the vegetables as small as possible and chop up left over garlic.
Combine all of the sauce ingredients together and stir until the vegetables are creamy with the sauce.
Place vegetables in the garlic marinated bowl and stir well. Cover and let stand in the refrigerator until cool.
This gets better as the salad marinates together.

This salad will keep good in the fridge for 5 – 6 days and can be frozen for later use.

Thanks to rickoh for sharing this salad recipe.

This is an original recipe that I created. I am working on a cookbook. Maybe someday it will be finished. I wish you continued success on your site. Bill Cosby (Bill Cosby from Missouri, not the Actor/Comedian)

1-2 heads of Cabbage
1- Green Pepper
1- Small Onion
1- Medium to Large Carrot
2- C. of Miracle Whip Light
1/2 C. Sugar
1/4 C. Vinegar
1/4 C. Vegetable oil

If you are Lucky to have a Food Processor Cut up Cabbage, while cutting up Cabbage Cut small slices of Green Pepper and Onion, or Carrot and add to Processor. This will help distribute flavor throughout slaw. You should only use 1/4 to 1/2 of Onion and Green Pepper but use all of the Carrot. If you truly love green pepper or onion you can add all but I do not recommend it.
Now mix Miracle whip, vinegar, and oil, Sugar. Mix smooth. Taste should be sweet with just a hint of vinegar. Amount of slaw dressing may be increased or decreased according to the amount of slaw you are making.
Add to cut up cabbage and Mix well. Let stand 1-hour if possible to let flavors mix. You will be happy with the results.
