			<content:encoded><![CDATA[<p>Here is Kim&#8217;s entry for our first Super Bowl recipe contest, for chicken bites that are wrapped in bacon, and dredged in a brown sugar and spice mixture, that is wrapped with bacon.  Talk about delicious!  Sweet and salty flavors go well together.  These are perfect to make for your next party.  <br />
1 pound chicken tenders, or chicken breast<br />
1 pound bacon, cut into thirds<br />
1 cup brown sugar<br />
3 tablespoons chili powder<br />
toothpicks</p>
<p>Preheat oven to 375 degrees.  In a small box mix together the brown sugar and chili powder, blend until the chili powder is mix thoroughly through the brown sugar.  Cut the chicken into bite sized pieces and wrap each piece with bacon, use a toothpick to secure the bacon. Dredge the chicken into the sugar mixture.  Place pieces of chicken on an un-greased baking sheet and bake for approximately 30 minutes or until the chicken is done and the bacon is crisp.</p>

<p>Special tools:    <br />1 round mold (lid to a peanut butter jar or other round container recommended)     <br />1 sheet plastic wrap </p>
<p>Divide ground beef into approximately 2 equal portions. Set aside. Line round mold with plastic wrap. Pat half of the ground beef into the round mold. Layer with cheese and bacon, being careful not to go too close to the edges. Cover with other half of the ground beef. Press down edges of ground beef together to seal. Remove patty from mold and pan fry over medium heat in 2 tablespoons of oil. Serve plain or on a bun. </p>

<p>Mix all everything together in crock-pot and cook on low for 2 hours or longer.</p>

<p>1/4 cup of bacon drippings<br />
1/2 cup milk<br />
1 egg, well-beaten<br />
1/2 cup sifted all-purpose flour<br />
1/4 teaspoon salt</p>
<p>Temp: 450? F Time: 10 &#8211; 15 min. I use a glass pie plate so if you also do, turn the heat down to 425°F.</p>
<p>Tip</p>
<p>One tasty and cooking trick &#8211; save in a mug in the fridge drained off bacon drippings to use in this recipe &#8211; also for that super taste in English Roast Potatoes!</p>
<p>Now combine well-beaten egg and milk; beat till light. Gradually beat in sifted flour and salt; beat with dover beater till smooth. Let stand 30 minutes. (I personally don&#8217;t bother with this letting stand 30 minutes step.)</p>
<p>Put the bacon dripping into an 8&#8243;x8&#8243; baking pan or divided up between 6 large muffin tins. Heat in oven, make sure you watch pan as it will start to smoke! Pour batter into hot pan; bake in hot over till done.</p>
<p>The trick is the hot fat and the hot oven. Do not keep opening the oven to check. Serve immediately as it will deflate as it gets cold. Pour nice beef gravy over top. Or you can use &#8220;Yorkies&#8221; with chicken.</p>

			<content:encoded><![CDATA[<p>One of my favorite menu items at the Outback Steakhouse has always been their Alice Springs Chicken.&#160; What makes their chicken so tasty?&#160; Grilled chicken breasts, topped with honey mustard, bacon, and cheese.&#160; Try our version of this recipe anytime!</p>
<p>4 Chicken Breast 1/2&quot; thick (maybe frozen)   <br />Chicken Breast should be skinless and boneless    <br />Honey Mustard    <br />6 Pieces of Bacon Sliced in Half and Fried Crisp    <br />1/2 tsp McCormick Season All    <br />1 C. Sliced Mushrooms (Canned or In Jar) drained    <br />3 C. Shredded Colby/Monterey Jack Cheese    <br />Parsley for Garnish</p>
<p>Rub chicken breast with Seasonal All and set aside to marinated for 1 hr. While the breast is marinating fry bacon crisp and drain. Shred cheese and set aside.   <br />Gather all other items together and make ready for the preparation.     <br />Take chicken from marinate and saute on medium heat in pan with just enough oil to prevent sticking. Cook on both sides until a slight golden color and cooked in the middle but not dry. Remove from pan.    <br />Spread chicken breast with honey mustard, cover with a layer of mushrooms, three slices of bacon and then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese. Pop in heated oven at 350 degree&#8217;s or a micro just until the cheese melts. Sprinkle with parsley and extra honey mustard may be served on the side.</p>
<p>Honey Mustard    <br />1/2 C. Prepared Salad Mustard    <br />1/4 C. Honey    <br />1/4 C. Light Corn Syrup    <br />1/4 C. Mayonnaise    <br />Blend all together until completely until smooth and free from lumps. The corn syrup may be adjusted depended on how sharp the mustard might be or to your taste.</p>

<p>2 Tbsp. Butter<br />
1 Onion, diced<br />
1 C. diced Potatoes<br />
1 tsp. Salt<br />
Dash of Pepper<br />
2 cans Cream Style Corn<br />
2 C. Milk<br />
2 Tbsp. Oscar Meyer canned Bacon Bits</p>
<p>In a large pot add potatoes 2 cups water, salt and pepper. Melt butter in large skillet, chop onion finely and add to butter. Saute onions until they are soft and transparent. Cook until potatoes are tender. Add onions, corn, and milk to this, and bring to a full boil. Add bacon bits and more seasonings if you like.</p>

Add crisp bacon which has been broken into pieces. Pour into buttered 2 quart casserole . Top with buttered crumbs. Bake for 40 minutes.</div>
