    Paci’s Italian restaurant in Brownsville PA – famous for their “Flippers”. Back in the early 60′s, they charged $.50 for a bag (paper lunch bag)-it included garlic toast. The wings were real crispy, but not hard. They were garlicky, salty, not greasy-delicious! My dad tried everything to replicate them, but no luck. Don’t know if they are baked, deep fried, pressure cooker, magic – does anybody know their secret???

    I’m trying pillsbury pizza dough
    Put Pam on baking sheet
    One individual size Quaker oatmeal: maple brown sugar
    Shake evenly on crust(careful, the sweet stuff lies at the bottom)
    A small amount of brown sugar spread evenly over oatmeal
    Chocolate chips spread on top(not too much or it will be too sweet)
    And finally, marshmallows not too many as well

    I’m fine tuning it but I think I’m on the right track.
    The crust is supposed to be pre cooked a little
    This may help with the timing of the marshmallows and crust being GB&C(golden brown and crispy) at the same time

    In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.

    To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.

    Ingredients

    3 tablespoons butter
    4 (8 ounce) sirloin steaks, pounded 1/2-inch thick
    salt, to taste
    pepper, to taste
    8 ounces mushroom, sliced
    2 shallot, finely chopped
    1 garlic clove, finely chopped
    1 cup beer, preferably Bass Ale
    1 dash Worcestershire sauce

    Directions

    In large, heavy skillet, melt 1 T butter over medium-high heat.Season 2 steaks with salt and pepper and add to the pan, weighting them down with a Dutch-oven or another skillet.Cook until browned, about 1 1/2 minutes per side.

    Transfer the steaks to a large platter, cover loosely with foil and repeat with another tablespoon butter and the remaining 2 steaks.In same skillet, add the mushrooms, shallots and garlic.

    Cook, stirring frequently, until the mushrooms are softened and the shallots are translucent, about 5 minutes.Reduce the heat to medium, add the beer and simmer until the liquid is reduced by half, about 3 minutes.

    Remove from the heat and whisk in the remaining 1 t butter and the Worcestershire sauce.Top each steak with the mushroom mixture.

    Looking for La Chiquita’s (Santa Ana, CA) recipe for enchilada sauce, or some close approximation thereof. It has a strong garlic flavor without the sting; I’ve tried freezing the garlic, etc., but can’t achieve the desired potency without the garlic ‘heat/burn.’

    This recipe is from El Toro’s (not Plaza Azteca) El Toro was the originator of the Mexican “white sauce”. The other local restaurants copied them.

    El Toro’s White Salsa

    1 cup Miracle Whip
    ½ c Milk
    1 clove pressed garlic
    1½ tsp each ground cumin, dried oregano & crushed red pepper flakes
    2tbsp sour cream

    Mix together & let set 3 hours or more

    MY VARIATION:

    Add zest of 1 lime plus juice from ½ lime
