Raglan Road located in Downtown Disney makes the most wonderful Guinness dipping sauce. When St. Patrick’s Day comes around people are dusting off their recipes for Irish Soda Bread, well I have the perfect dipping sauce for you. Guinness is reduced down along with sugar and makes a wonderful tangy dipping sauce for bread. I would highly recommend dining there if you can, last time I went along with my friend and her husband’s family, this place was on the Disney Dining Plan. We loved everything we tried there; we ate, and ate, and ate.
1 3/4 cup Guinness
1 3/4 cup sugar
In a medium sized pot combine the Guinness and sugar, simmer on low for approximately an hour. This mixture will reduce by at half if not more. The more this reduces the better, as you will end up with a tangy sauce. Do not walk away while this is cooking, it will bubble up while cooking, and you need to stir it from time to time so it does not bubble over the stove. Let the sauce cool to room temperature before serving. When you are ready to serve the sauce place equal amounts of the reduction and olive oil (you do not need to use extra virgin, in fact, don’t, the flavor won’t right). Dip pieces of bread into the reduction and enjoy.

Irish Soda Bread
This is not the Raglan Road’s Irish soda bread, this is an Irish Soda bread that I like to make. I couldn’t get past the delicious dipping sauce to even begin to focus on their bread. Next, time though, I will work on their bread.
3 cups flour
1/2 cup sugar
1 teaspoon kosher salt
2 1/2 teaspoons baking soda
1/4 cup cold unsalted butter cut into small pieces
1 1/2 cups buttermilk
1 tablespoon milk
Preheat oven to 350 degrees. Mix together flour, sugar, salt, and baking soda in a large bowl. Cut butter into flour mixture using a pastry blender until the butter is well dispersed and the mixture is crumbly. Add buttermilk and stir until just moistened. Knead for 1 minute on a floured surface. Shape into a ball and place into a 1 1/2 quart greased casserole. Use a sharp knife to cut and ‘X’ across the top. Brush with milk and bake for about 45 minutes tenting with foil for the last 15 minutes. Turn loaf onto a wire rack to cool.

Denny’s is the first restaurant I know that is selling an appetizer for breakfast, those appetizers are pancake puppies. Pancake puppies are crispy balls of pancake that are fried and then rolled in powdered sugar. There are currently two flavors, plain, and then this one, the blueberry and white chocolate pancake puppies. If you like fresh hot donuts, you will enjoy these pancake puppies. While you may feel completely guilty eating these, it won’t be too hard, these are crispy, sweet, and most likely the most unusual way you will ever prepare pancakes.

2 cups Krustez blueberry pancake mix

1 cup water

1/2 cup powdered sugar

1/3 cup white chocolate chips

4 cups vegetable oil

In a medium sized pot, add 4 cups of oil, and heat oil to 350 degrees. In a medium sized bowl combine pancake mix, water, and white chocolate chips and mix until blended.

Use a cookie scoop to scoop out pancake batter and drop into hot oil. Turn pancake puppy when the pancake dough ball turns brown, flip over using a slotted spoon, and cook until the other side has been browned.

Remove cooked puppies and drain on paper towels. Roll puppies in powdered sugar, and top with any remaining powder sugar serve with your favorite pancake syrup.

Bagels for breakfast are one of my favorite types of breakfast. One thing I really enjoy from the bagel places is the wonderful cream cheese spreads they have available. When made fresh they seem to have a flavor that is free from additives, and your cream cheese spreads so nicely over your bagel. While, I should say I also adore lox, capers, and thinly sliced red onions on my bagel, sometimes I want something sweet.

1 10 ounce package frozen strawberries, thawed
1 8 ounce package cream cheese, softened

Carefully drain off about 1/3 to 1/2 cup of the juice from the frozen strawberries. You will not need the strawberries for this recipe. You could make another recipe from the strawberries like the Red Robin Strawberry Lemon Aide. Cut cream cheese into large cubes, add cubes of cream cheese into the bowl of your food processor. Drizzle strawberry liquid over the cream cheese. Pulse the cream cheese and strawberry liquid until well mixed.

This is just a start, you could add some of your favorite liqueur into this, 2 tablespoons of Chambord, and a touch of orange zest gives you a spectacular cream cheese spread.

Now I have shared my two favorite ways of having bagels for breakfast (lox and other goodies, and something sweet), what is your favorite way to have your bagel?

It is such a treat to go into Starbucks and enjoy a coffee and something sweet. It is one of my life’s little pleasures. Freshly baked banana bread is hard to beat. Banana walnut bread isn’t difficult to make, in fact you can make banana walnut bread that will taste just like Starbucks. I recommend using bread flour if you have it on hand, as it gives the bread a more dense feel. Why not try making some this banana walnut bread, and bring it to your co-workers. Unlike in the store, you can enjoy this banana walnut bread while it is still warm out of the oven.

1 3/4 C. flour (bread flour is best)

2/3 c. sugar

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 cup mashed ripe (this is usually 2 or 3 bananas)

1/3 cup margarine

2 tablespoons milk

2 eggs

1 cup chopped walnuts (divided into 2 (1/2 C.) portions

Preheat the oven to 350 degrees. In a medium size bowl combine all dry ingredients (flour, baking powder, baking soda, and salt), stir together to combine. In another medium size bowl combine margarine and sugar, with a mixer cream the margarine, and sugartogether until light and fluffy. Add in mashed bananas, eggs, milk and mix well. Add 1/2 of the dry ingredients into the wet ingredients, mix until the flour is just mixed in, then add in the remaining flour and 1/2 cup walnuts, blend together until everything is mixed together. Do not overstir.

Pour batter into a greased 8×4 inch loaf pan. Then top the batter with the remaining chopped walnuts. Bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack.

While Starbucks does not make their banana bread with butter, I think this comes out more rich this way. I also like to add in a sprinkle or two of cinnamon and sugar into this, again, not in their recipe, it does add that little something extra.

1/4 C. melted butter (they don’t use butter, you can use margarine)

1/2 C. sugar

2 tsp. cinnamon

Icing

1 lb. powdered sugar

1 Tbsp. milk

1 Tbsp. melted butter

1/2 tsp. vanilla

Preheat oven to 350 degrees. Roll out pizza dough to a rectangle, roughly 10 by 12 inches, cut in half across the longest side, and then cut the other sides into 8th’s. You should have 16 individual pieces now. Place pieces onto a lightly greased baking sheet, and bake for approximately 15 minutes.

While the sticks are baking, make the icing by combining the powdered sugar, vanilla, milk, and 1 tbsp. of butter. You may need to add additional milk to thin down the icing. Set icing aside.

Combine the 1/2 cup sugar and 2 tsp. cinnamon in a bowl, mix well. Melt the 1/4 cup butter and when the pizza dough is done brush with butter. Sprinkle over the cinnamon and sugar mixture over the freshly buttered sticks. Enjoy.

In England, as a kid due to food shortage, we were given the choice of having our slice of ‘Yorkie’ on our dinner plate or served as our ’sweet’ with jam on it. Of course we always choose our Yorkie as a ’sweet’ else we did not get any dessert!

1/4 cup of bacon drippings
1/2 cup milk
1 egg, well-beaten
1/2 cup sifted all-purpose flour
1/4 teaspoon salt

Temp: 450? F Time: 10 – 15 min. I use a glass pie plate so if you also do, turn the heat down to 425°F.

Tip

One tasty and cooking trick – save in a mug in the fridge drained off bacon drippings to use in this recipe – also for that super taste in English Roast Potatoes!

Now combine well-beaten egg and milk; beat till light. Gradually beat in sifted flour and salt; beat with dover beater till smooth. Let stand 30 minutes. (I personally don’t bother with this letting stand 30 minutes step.)

Put the bacon dripping into an 8″x8″ baking pan or divided up between 6 large muffin tins. Heat in oven, make sure you watch pan as it will start to smoke! Pour batter into hot pan; bake in hot over till done.

The trick is the hot fat and the hot oven. Do not keep opening the oven to check. Serve immediately as it will deflate as it gets cold. Pour nice beef gravy over top. Or you can use “Yorkies” with chicken.

Thanks to Ladylumps for sharing this recipe.

12 oz beer (not light or corona)
3 C. self rising flour
1/3 C. sugar
3 Tbsp. butter, melted

Preheat oven to 350. Spray a 9″ x 5″ loaf pan with baker’s cooking spray. Combine flour and sugar; stir in beer (you might have to use your hands to get it mixed thoroughly). Dough will be sticky. Pour into prepared loaf pan; brush top with melted butter. Bake for 50-60 minutes or until top is golden brown. Cool slightly; remove from pan and finish cooling.
