In Texas the summer is just starting. I must say people who are in devastated areas are in my prayers. The news reports have been amazing, and I hope that everyone is in good health and their loved ones are safe.

Right next to Italian night, one of my favorite evenings is Mexican themed night. Turkey enchiladas are an inexpensive way to make tasty enchiladas. I am pairing these up with Chipotle’s Basmati Rice, if you have never tried these rice before it is perfectly seasoned rice with cilantro and lime.
