Menu Plan April 25 through May 1
I hope you had a wonderful holiday weekend. Easter was last weekend, and Passover is almost over. Spring is most definitely here now.
April 25
King Ranch Casserole – this is one of those classic casseroles that we all grew up enjoying. For me this was the type of dish that we would bring to a father-daughter banquet for Girl Scouts. This is a wonderful way to use up cooked chicken, and left over corn tortilla shells.

Black and Blue Chicken – this is one of the rich dishes that is perfect to serve during a week night when you want something special. We are going to pair up this salad with an easy to make Salad Caprese.
