I hope you had a wonderful holiday weekend. Easter was last weekend, and Passover is almost over. Spring is most definitely here now.
April 25
King Ranch Casserole – this is one of those classic casseroles that we all grew up enjoying. For me this was the type of dish that we would bring to a father-daughter banquet for Girl Scouts. This is a wonderful way to use up cooked chicken, and left over corn tortilla shells.

Black and Blue Chicken – this is one of the rich dishes that is perfect to serve during a week night when you want something special. We are going to pair up this salad with an easy to make Salad Caprese.

To Die for Pot Roast – this is one of the most popular recipes at CopyKat.com, if you have never made a roast before, and you may feel intimidated, this is the roast for you to make. Tonight we are serving up the roast with Luby’s Spanish Indian Baked Corn.

Pork Tenderloin Diane – is a rich way to enjoy a pork tenderloin. You don’t want to miss this easy to make tenderloin being served with a tangy sauce, we are serving the pork tenderloin with Spicy Stuffed Yams.

Castaways Steak and Mushrooms – Tonight is a dinner that is a little more hearty. We are serving up a very traditional steak and mushroom dish, with one of my favorites, twice baked potatoes.

Chilis Monterey Chicken – I don’t think many of us can make it through a week without serving boneless skinless chicken breasts. This doesn’t take too long to prepare, and tastes great. We are serving this with some Guadalajara Cilantro Rice.
