It has been a couple of very busy weeks in the CopyKat kitchen lately. We are getting ready for Easter festivities. Easter is a special holiday in which you can share a special meal with your friends and family. I know I have thrown a brunch for the past 7 or 8 years now in which all of my friends bring some of their favorite recipes.

Maybe you have been to a Japanese restaurant and tried Teriyaki beef. This has a wonderful sweet and tangy sauce. We are serving this with my Grandmother’s baked sweet potatoes and apples.

Beef Stroganoff is one of my favorite dishes, the creamy sauce along with the beef. I like to use inexpensive cuts of chuck roast when I can to make my beef stroganoff.

Houston is home to the Black Labrador, it is a wonderful British Pub, and Shepherd’s Pie is one of their best known dishes. We are serving this Shepherd’s pie with a crisp cole slaw.

It is hard to beat a fresh fish when grilled. No one grills fish like Pappadeaux, you can grill fish just like they do. We are serving this dish up with honey and thyme baked carrots.

Growing up Sloppy Joes night was always a special treat. I love having Sloppy Joes for dinner, and you don’t have to reach for a can of Manwhich to make Sloppy Joes you can make them from scratch.
Popover Chicken Tarragon was a favorite of mine for many years, this is a delicious recipe to make for when you want a little something special for dinner. This is being served up with another one of my favorite dishes, and that’s twice baked potatoes.
