Sweet Tomatoes Southern Dill Potato Salad is the perfect salad for when you want to eat light. Simple red potatoes, and yogurt, with a touch of dill make for an easy to prepare potato salad.

Who doesn’t love potato salad, for me, it is a special treat. I have fond memories of my Grandmother Ethel making potato salad, and having for breakfast the next day. She would always fuss at me that potato salad wasn’t a good breakfast food, but it never stopped me. If you are looking for a lighter potato salad, this one is perfect. There is no fat in this potato salad, and anyone can prepare this potato salad.

This dill potato salad is perfect for when you want a lighter dish, by using yogurt you can really save on calories.

Ingredients

2 pounds red potatoes
1 1/2 cups whole fat plain yogurt
1 1/2 teaspoons dry dill, 1 teaspoon fresh dill
1 teaspoon salt

Instructions

Cube red potatoes into 1/2 inch cubes, place in a pot and cover with water, potatoes are served with the skins on. Boil potatoes until soft. Drain potatoes, and place into the fridge. When the potatoes have cooled place into a bowl, add yogurt, dill, and salt. Mix together well, and season for salt and pepper if needed. This tastes better when the flavors meld together.

While this is how they serve their potato salad, I think radishes, or even a few green onions would make this a nice change.
