It is hard to believe that this year has come to a close, this has been an exciting year with many changes.  I would like to wish every one a 2011 filled with peace, health, and prosperity.  I hope everyone stays warm this week!  I know many of you are facing very chilly weather this week!

Happy New Year! I bet you have some new year traditions to include on your menu, perhaps you eat something for luck, or something to make bring you the money this year. I live in the South, so cabbage, and black eye peas are all of the rage. Pork is a popular dish to serve in Cuba, Spain, Portugal, Hungary, and Austria. I can’t think of anything better than a honey peach pecan pork roast.

I did, but you know they take a long time to prepare, but you can prepare a cabbage roll casserole that tastes just like the cabbage rolls you have always loved, but these are easy to prepare. I love this recipe, it makes a large quantity, so you can have the left over portions to bring to work, or for the next day.
