Grand Lux Cafe Buffalo Spring Rolls are a wonderful treat, they combine the wonderful buffalo chicken flavor into a crispy springroll. These are served blue cheese salad dressing, and celery sticks. This has been one of my favorite finds recently, in dining out. The Grand Lux Cafe restaurant makes all sorts of delightful appetizers and this one is no exception.

Grand Lux Cafe Buffalo Spring Rolls
Grand Lux Cafe Buffalo Spring Rolls are a wonderful treat, they combine the wonderful buffalo chicken flavor into a crispy springroll.
Ingredients
- 1 pound chicken boneless, skinless chicken breast
- 1 boullion cube
- 3/4 cup Franks Red Hot Sauce
- 1/2 cup shredded mozzarella cheese
- 1 beaten egg with 1 tablespoon of water
- 1/2 cup blue cheese salad dressing
- 1 package of spring roll wrappers
- 6 cups of peanut oil for frying
- 6 ribs of celery sliced into celery sticks
Instructions
Cook chicken breasts by placing into a pot of water, along with boillion cube, boil chicken until completely done. Remove chicken from pot, allow the chicken to cool, and shred and cut chicken into small bite sized pieces. Combine shredded chicken, Franks's Red Hot sauce, and mozzarella cheese. Place about 2 teaspoons of chicken mixture onto spring roll and roll spring roll, secure spring roll with beaten egg.
Heat cooking oil to 350 degrees. Fry a spring rolls a couple at a time until all are done, do not overcrowd, or add too many because the temperature of oil would drop too low and the spring rolls wouldn't be crisp. Drain cooked spring rolls on paper towels and serve with blue cheese and celery sticks.
