Fresh Herb Green Beans

Fresh Herb Green Beans are a wonderful treat during the summer. The summer always brings me back to childhood and having fresh produce out of the gardens. Growing up both my grandparents and my parents all had gardens. For some reason Green Beans seemed for us, to be the one crop that would always product abundantly. Normally serving green beans meant serving them cook up with bacon and onions, but recently, I came across a recipe that had a little more sophistication. If you are like me, green beans often come out of a can, or sometimes even frozen, I would urge you to pick up some fresh green beans during the summer, when they are just picked at the farm, you are going to really enjoy the difference in flavor.

Fresh Herb Green Beans

Fresh green beans are so much better than those out of a can. You can make these green beans in minutes.

Ingredients

  • 1 pound fresh green beans
  • 2 tablespoons butter
  • 2 tablespoons fresh herbs like flat leaf parsley, dill or even chives
  • 1 teaspoon kosher salt

Instructions

Clean fresh green beans, and snap off stem end, and if the bean is more than 4 inches long or so, cut in half. Boil approximately 2 quarts of water that has been salted with 1 teaspoon of kosher salt. Once water is boiling add green beans, and cook for approximately 6-8 minutes. You want the beans to still be somewhat crisp when you pull them out. Place beans into a bowl, add butter, and fresh herbs, combine beans, butter, and herbs. Season with salt and pepper if you desire.

The herbs in this recipe are really meant to be fresh ones, and you can use whatever you have on hand. Be experimental in your paring of herbs and fresh vegetables.

    The beans look great! So green and plump and healthy. Not only is the taste incredibly different, but the texture is like night and day. When they’re really fresh, it’s hard not to pop them in your mouth as you’re prepping them.
