To me, summer spells out salad. Favorite Thing Salad is a recipe I adapted from a recipe mailing list I have been on. Favorite Things Salad is a delicious salad that can be made ahead of time, and served later. This hearly salad has flavors of the southwest, and Italian influences. You could adapt this salad for what you have in your refrigerator.

Favorite Things Salad
This salad is a great side or topping for any salad!
Ingredients
- 1 can Green Giant Southwestern-style corn (corn, black beans, peppers) drained
- 1 ripe Haas avocado, cut in chunks
- 1 4 ounce jar marinated artichoke hearts
- 1/4 cup sliced calamata olives
- 2 cloves garlic minced fine
Instructions
Combine all ingredients together in a medium sized bowl, let flavors marinate for at least two hours before serving.
