Garlic, Eggs, and Pasta is a dish I have been making for almost 20 years now. If you don’t have a lot in your pantry, I bet you can make this dish. You only need a few simple ingredients: dry pasta, garlic, eggs, Parmesan cheese, and a bit of olive oil. This dish I orginally saw on the Frugal Gourmet show years ago. Jeff Smith said this would have been a dish that the ancient Romans would have eaten. If you are looking for a meatless dish, or one that is simply inexpensive to make, this is the ideal dish for you.
What I really like about this dish, is that it takes no time to make, by the time you boil your pasta, the meal is practically done. You may want to try variations on this dish, you could add some fresh herbs, or even bits of left overs you already have in your refrigerator.

Yield: 1 to 2 servings.
1/2 lb. pasta your choice
2 eggs, beaten
2 tsp. olive oil
4 cloves garlic
2 Tbsp. freshly grated Parmesan cheese
Salt and pepper to taste
Put the pasta onto boil in plenty of salted water. In the meantime, heat the oil in a small frying pan and add the garlic. Sauté just for a moment and then add the eggs and cheese, cook the eggs until done. Drain the pasta and toss all ingredients together. Salt and pepper to taste.
