My husband is a die hard GIANTS fan, so this past weekend I made blue and red (giants colors) punch. This can be a little tricky so I have step-by-steo directions with photos on my blog
    http://gigglingbites.blogspot.com/2012/01/ny-giants-support-punch.html

    Go Giants!!

Theses are so easy to prepare and go great with all the other Superbowl fav’s like chili or soup!

    Kicking Game day wraps

8-10 fried chicken tenders (I buy mine in the deli counter makes it easy)
    4-5 garden spinach herb wraps

    Slaw
1 16 oz. bag slaw mix
1 11 oz. can southwestern style corn drained
    ¼ cup fresh chopped cilantro
    3 green onions chopped

    Slaw dressing/ spread for wrap
    1/2-cup mayonnaise
    1-tablespoon French Dijon mustard
    1/8-cup rice wine vinegar
    1-tablespoon brown sugar
    1-tablespoon ketchup
    2 tablespoons Jamaican Jerk seasonings
    2 chipotle peppers
1-tablespoon adobe sauce from chipotle peppers
    1/8-cup fresh cilantro
    1 fresh mango sliced
    1-teaspoon kosher salt

Start by chopping green onions and 1/4-cup fresh cilantro add to slaw mix in medium size bowl. Drain corn and fold into slaw mix. Set aside.
Start dressing by placing mayo, Dijon mustard, rice wine vinegar, brown sugar, ketchup, jerk seasonings, chipotle peppers and adobe sauce, and fresh cilantro pulse until smooth and creamy. Add fresh mango slices and pulse 3-4 times to chop mango. Add salt stir; save 1/8 cup for spreading on wraps then pour the remaining onto slaw mix toss well cover and place in refrigerator

In microwave place chicken tenders and reheat microwaves differ I use reheat setting for pizza. Remove from microwave slice each tender into 4 slices using 2 tenders per wrap. Begin making wraps. By lace 1-2 tablespoons of sauce on each wrap followed by generous helping of slaw top with chicken tender slices and roll up. I cut these on a diagonal and serve with sweet potato fries. The guys love these so you may want to make at least 2 for each person. Easy, can make slaw and sauce ahead and purchase wraps and chicken tenders day of game!

Serves 2-4 hungry men or 4-5average appetites
    Easy
15 minutes prep and 10 minutes to assemble and serve.

I am moving this post to the 2011 posting, and closing this thread.

      Thanks!

The plan so far is to make a beef and cheese queso dip, Jack Daniels sliders, Kapp fries(fries with cheese, bacon and ranch or some kind of dip most restaurants have them this is just what we call them), and possibly Carmine’s wings. There are only 2-4 of us so might be a little too much but that’s usually how it is and how we like it. And I think the drink of the night will be Sweet tea vodka Arnold Palmers.

    • Allison

Wow, only a year late…I just noticed.

Congradulations to Mitzi for being the winner of this contest. Her name was picked at random, from everyone who entered.

    • Mitzi

Thanks to Stephanie for making my recipe to where it could be duplicated by measurements. Looking forward to trying to do break down a recipe into measurements for the next Superbowl recipe.

  • Diana

I would love to have Chicken Flautas, Chicken Empanadas, homemade chips, guacamole, fresh salsa, and queso dip at a superbowl party. Too bad my husband won’t eat any of it!

  • http://www.vickyvalle.blodspot.com Vicky

Not sure how this got started, but my hubby’s favorite game food is a steak sandwich! We do the bean dip, fresh salsa, veggies w/ dip, etc. but he just HAS to have his steak sandwich to put him in happy mode.

  • http://piggyhawk.wordpress.com Stephanie

My hot taco dip comes out for every party. I make it in a Crockpot for big parties. You can freeze portions & put it in a dip crock or microwave as a last minute or no-prep dip.

    * 12 oz jar salsa
    * 15 oz can/jar chili
    * 8 oz cream cheese (fat free= great)
    * 16 oz sour cream (fat free = great)
    * 1-2 bags cheddar & /or jack cheeses (reduced fat = great)
You just stir it all up as it melts. Serve with tortilla chips of your choice. We get black and gold tortilla chips for Superbowl parties here in western PA.

Another way to make it is in layers w/ salsa+chili, cream cheese + sour cream, and shredded cheese. You do that in a 13×9 pan at 350 until bubbly. It’s key to keep it warm though so I recommend a warming tray if you go that route.

Casa Ole (a restuarant) refused to fork over thier recipe for the green sauce they serve, so I set to work in the kitchen and came up with this – I think its exact but we shall never know unless we ever get them to reliquish thier version. Mines better! *GRIN*
    4 Avocados
1 (16 oz.) container Sour Cream
    1 can Rotel tomatoes
    1 Tbs. Garlic Powder
1 (4 oz.) can Green Chili Peppers
    2 tsp. Salt
    1 tsp. Lemon juice
    3 oz. Cream Cheese
Whip ingredients until smooth. Enjoy with Chips.

I usually make a full Brisket in the Large Roaster, it gets attention the day before- let it marinate in the fridge with Claude’s Brisket Sauce and then put it on before we go to bed – I toss in potatoes, carrots, etc and when we wake up the scent is lingering- folks are ready for some football! http://www.claudessauces.com/

James makes his Rotel, Cheese and Sausage dip too- thats a must- he sneaks in some extra ingredients- I havnt caught him in the act yet but I suspect its Balsamic Vinegar. LOL

I guess this year Angels on horseback might be funny since its the Colts vs the Saints HAHAHA

  • Tami J Perry

Well seeing as we are going to be rooting for the Saints in the superbowl we will be having a cajun inspired menu. As of right now the only thing for sure is chicken, sausage, shrimp gumbo along with a couple of appetizers to snack on. Looking at making some Chunky Crawfish Spread, Louisiana Crab Dip and some stuffed cajun-style mushrooms. For dessert I want to try a Mud Pie and for drinks the hubby and I will be having Hurricanes.

  • Liz Slater

In addition to the usual appetizers, I prepare a custom pizza buffet. A day or two ahead I make up several batches of pizza dough and store it in personal pizza size servings. The day of the Super Bowl I roll out crusts and allow everyone to assemble their own pizza from the multiple ingredients I’ve assembled on the counter. These ingredients I also prepare ahead of time, and range from the typical pepperoni, ham and sausage, to fruits and veggies, and a variety of cheeses. This year I plan to try potato after seeing it on the Food Network’s "The Best Thing I Ever Ate." All in all, my crowd loves this and some of their wild "experiments" have now become regulars!

  • http://www.copykat.com Stephanie

y’all have a lot of great suggestions. I am going to have to rethink my menu totally. I love the idea of having a cook off during half time and the loser wining a cookbook.

  • Nonie

We have a "CHILI COOK OFF" every year, and its great fun! Every family brings their own crock filled with Chili, and at half time we JUDGE them (as well as eat all the apps and other foods). We have prizes for BEST USE OF MEAT, BEST KNOCK OFF, LEAST FAV (gets a cookbook), and BEST OVER ALL.

  • Frances

I love superbowl. We’ll be having hot wings, nacho chips and velvetta and salsa dip, little smokies wrapped in crescent rolls. I’m going to try and make a football cake this year since I took a cake class.

  • Kate

I moved to a new city and have a few friends that are vegetarian. Thinking about doing the regulars like chips, queso, salsa and veggies. Also thinking up some new ideas like southwestern egg rolls or quesadillas and some ‘make your own mini pizzas’. Look forward to seeing new ideas on here too!

  • Mitzi

My husband likes to have his Nachos every "Super Bowl" Day. I take a cookie sheet and cover it with aluminum and cover with non-stick spray. Then I use the following (in layers in order):

Completely cover cookie sheet with tortilla chips
Can of refried beans that you have poured juice from jalapeno peppers in a jar in and stir juice thoroughly through the beans. Spread completely over chips. This may be easier if you nuke it and place in a large ziplock type bag. Then make it like a pastry pipe by snipping off the end and then squeeze. Using a spoon after to spread.
Can of chili without beans layered over the refried beans, completely.
Sharp Cheddar Cheese (shredded) layered completely over the chili.
Place in a preheated oven of 400 degrees and bake approximately 10 minutes (or until cheese has melted and you see chips are crisp).

There are many toppings from this basic recipe to build your Nachos to your taste from: Salsa, guacamole, sour cream, tomatoes, jalapenos, olives and lettuce to name a few options. Enjoy! It is a crowd pleaser and an easy to make recipe.

  • Rubelishous

Greetings – I’m not traditionally a Superbowler as I’m not into football. However, I’ll be visiting friends for the game. There I hope to enjoy a gourmet chili and all the fixin’s. I’ll be bringing cake balls. I think I’ll shape them into footballs and decorate accordingly. Pictures will be forthcoming.

  • http://induetimemychild.blogspot.com Lara

Oh man, can’t wait for the Superbowl food. We like chicken enchilada rolls, chili cheese queso & tortilla chips, pizza bagels, camelized onion dip, and soft steak sliders. Delish!

  • Sindy

I let others deal with the food I make goodies. I make Chocolate Chip Bars, Cheesecake and my new goodie is small kiss sized meringues with the bottoms dipped in chocolate.

  • Janine Nightingale

I love having friends over for the Superbowl. I make really delicious steak sandwiches. I use two "crock" pots to keep ingredients warm. The first crock pot has steak that I have thinly sliced and cook in beef broth and spices. The second crock pot holds onions and peppers cut into strips and cooked in liquid and spices. I put rolls on the table with additional toppings available like tomato, lettuce, cheese, etc. Keep both crock pots warm with a ladel and friends make their own steak sandwiches. Delicious!

  • Mary Martin

Love superbowl! Always have big party. Making 7 layer bean dip, nachos, and if the weather is good we are going to grill.
