Believe it or not, lentils are easy to make, and they are healthy.    Lentils make a great side dish, or even a main dish.  Best of all they are inexpensive to make, and they are ready in about 30 minutes, so you can make these for dinner, and you don’t have to slave away all evening to prepare dinner for these.  We used chicken stock to cook our lentils in, you could use plain water, or even vegetable stock if you wanted a vegetarian variety.

Lentils – healthy and easy to make

8 oz.  Lentils
1 small onion
2 medium sized carrots
1 stalk celery
32 oz. chicken stock
salt and pepper to taste
2 bay leaves
2 Tbsp. butter
 
Chop onion, carrots, and celery finely, put in a medium sized pot and saute in butter until browned.  You may want to add some salt at this point to help the vegetables to sweat.  Add bay leaves and season vegetable mixture with salt and pepper.  Add chicken stock and lentils cook on low – medium heat until the the lentils are done, this took about 20-25 minutes.
