Southern Cold Vegetable salad – a few fresh ingredients, and some canned vegetables make a delicious salad.
This colorful salad is found at many pot lucks and cookouts in the South. You can make this salad ahead of time, and let everything marinate together for better flavor.
Dressing:
1 Cup sugar
1 tsp pepper
1 tsp salt
1 Tbsp. water
3/4 cup corn oil
Salad ingredients:
1 16 oz can shoepeg corn
1 large can French Style green beans
1 large can Small English Peas
1 7 oz jar chopped pimento
1 Chopped medium size green bell pepper
1 medium sized onion chopped
1 cup chopped celery
To make the dressing, place all ingredients into a pan and bring to a boil stirring constantly. Let boil for 1 minute, remove from heat and let cool completely.
Dump all the vegetables into a colander and let drain.
When dressing has cooled, place all ingredients together and marinate over night in refrigerator until ready to serve.
