Santa Fe Salad Dressing is a delicious way to add a lot of punch to even the most basic salad. Chockfull of fresh ingredients such as cilantro, garlic, ginger, lime juice, vinegar, and spices, it beats anything you can find on the store shelves, hands down.

  1. Drop garlic cloves and ginger through the feed tube of a food processor while the motor is on. Continue processing until garlic and ginger are finely minced.

  2. Add spices, lime juice, vinegar, honey, and parmesan cheese. Process until well mixed.

  1. With the motor running, slowly pour the oil through the feed tube. Let it process one more minute.

  1. Transfer the dressing to a jar.

Cheesecake Factory Santa Fe Salad

  1. Slice a grilled chicken breast into bite size pieces or thin strips.
  2. Place the chicken strips on top of a bed of mixed greens. Use your favorite salad blend or baby leaf lettuce and romaine.

How Long Does It Last

Ingredients

  • 3 tablespoons garlic
  • 1 tablespoon fresh ginger
  • 2 bunches cilantro rinsed well, most of the stalk ends trimmed off, and finely chopped (about 1 cup loosely packed)
  • 1/2 cup fresh lime juice
  • teaspoons wine vinegar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon freshly ground pepper
  • 1 tablespoon honey
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup canola oil
  • 1/4 cup olive oil

Instructions

With a food processor

  • Drop the garlic cloves and ginger through the feed tube while the motor is on. Mince well.

  • Whisk in the oil until it is emulsified into the dressing.

Notes

To make the Cheesecake Factory Santa Fe Salad, you will need mixed greens, shredded grilled chicken breast, corn kernels, rinsed black beans, bell pepper, chopped tomato, shredded cheese and toasted tortilla strips.

    This recipe was spot on for Santa Fe salad dressing from cheesecake factory. The one thing it was lacking was the peanut sauce which I solved by buying a bottle of Thai. Peanut sauce actually was really good. Also the cilantro for me it had too much cilantro I reduced it by one, and I probably would even reduce that by a little bit more I also reduce lime but the one thing I didn’t reduce was the spices and the oil which I should’ve reduced the oil that was my own fault but overall it was excellent. Every recipe is based on your taste so if you don’t like all the cilantro, just reduce it, but remember to reduce the oil.

    Amazing dressing and marinade. We followed recipe exactly as shown but did add a couple of tablespoons of Thai spicy peanut sauce. Used on copy of Cheesecake Factory Sante Fe Salad and then marinated prawns and steak one night and grilled them. Wow-great flavor on everything. Thanks for the recipe.

    There is a fair amount of Parm in this recipe and I wanted to make it vegan. Anyone try it without the parm and can tell me how it was? I would use another sweetener as well. Im hoping if I leave those out and add peanut butter, it will still be amazing!

    I made this recipe tonight and it was very delicious. I used only one bunch of cilantro and it was enough for me. I used EVOO for the oil. Will definitely make it again.
