These cookies are sweetened with Orange Juice.  This recipe is from the archives of my grandmother, Ethel Eynard.  Jefferson City, MO.  1989.

My father was diabetic and my Grandmother would always try out new recipes trying to find really tasty diabetic cookies. These ones were really good 😉

Diabetic Sugar Cookies

These diabetic cookies my grandmother made for my Dad all of the time.   These cookies are full of nuts and raisins and flavored with orange zest.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoons grated orange peel
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter
  • 1 egg
  • 1/2 cup orange juice
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  • Combine ingredients in order given. Stir with a wooden spoon until well mixed. Put on a greased cookie sheet. Drop by tablespoon 2 inches apart. Bake 30 minutes at 375 degrees.

    These sound very yummy but considering all the sugar in orange juice and raisins (natural sugar from fruits is just as bad for diabetics), I’m not sure they can be considered a “diabetic friendly” food.
