		<description>I made hundreds of cases of guac for Chipotle in 2010 working as a prep person for them in San Diego. The recipe is as follows:

1 case avocados
2.5c diced red onions
2.5c chopped cilantro
1c diced jalapenos, seeds left in
1/2c lime juice (though they actually use a limlemon blend made by Oodwalla)
3T kosher salt

Mash avocados almost entirely. Stir in remaining ingredients. That&#039;s it.</description>
