Chipotle Mexican Grill Guacamole

You can make a large batch of Chipotle Mexican Grill Guacamole just like they do. Fresh ingredients such as red onions, avocados, garlic and more make for a wonderful side dish for your favorite Mexican food.


  • 24 ripe avocados
  • 1 1/2 cup red onion, minced
  • 1/2 cup jalapenos, minced
  • 3 cloves garlic, minced
  • 1/2 cup lime juice
  • Salt


Wash avocados. Cut in half and scoop out the meat into a large bowl. Partially mash the avocados. Add onion, jalapenos, garlic and lime juice. Mash together until well blended and fairly creamy in consistency. Salt to taste.

    I made hundreds of cases of guac for Chipotle in 2010 working as a prep person for them in San Diego. The recipe is as follows:

    1 case avocados
    2.5c diced red onions
    2.5c chopped cilantro
    1c diced jalapenos, seeds left in
    1/2c lime juice (though they actually use a limlemon blend made by Oodwalla)
    3T kosher salt

    Mash avocados almost entirely. Stir in remaining ingredients. That’s it.

    there’s no garlic in chipotles recipe. the recipe is as follow:

    24 avacados
    4 cups diced red onion
    4 cups fresh cut cilantro
    3 cups diced jalapeno
    1 cup lemon/lime juice
    5 tablespoons salt

    use to be a manager there and will never forget that recipe. if you want to know anything else, feel free to ask.

      2 ripe avacados
      1/2 cup chopped red onion
      1/2 to 3/4 of a chopped jalapenos onion (i take out seeds)
      1/2 tablespoon lime juice
      1/2 tablespoon lemon juice (both juices are important)
      1/4 teaspoon salt
      2 tablespoons chopped cilantro
      I make this all the time. dead ringer for the chopotle recipe.

        correction.. 1/4 of a red onion. I think chopped that ends up being less than 1/2 cup.

    You might want to change that to be 2-4 Avacados instead of 24 Avacados.
