Whole Wheat Banana Bread – even the white flour lovers will like this bread.
Banana bread is a favorite of so many, you can make this a little healthier. Do you have over ripe bananas laying around? Put them to good use, make home made banana bread. This recipe is from the archives of my grandmother, Ethel Eynard. Jefferson City, MO. 1981.
1 3/4 C. whole wheat flour
1/2 C. sugar
1 Tbsp. baking power
1/4 tsp. salt
1/2 C. walnuts, chopped
1/3 C. oil
2 eggs
2 medium bananas, mashed (about 1 cup)
Preheat oven to 350 degrees. Grease a 9×5x3-inch loaf pan. Mix flour, sugar, baking power, salt, and nuts thoroughly. Mix oil and eggs together. Mix in bananas. Add dry ingredients to banana mixture. Stir until just smooth. Pour into loaf pan. Bake 45 minutes.

Is it bad that the mixture didn’t “pour” into the pan? It had the consistency of cookie dough when I was done mixing. We’ll see in 45 minutes!
It really should pour like batter. Not sure what happened there. Hope it comes out ok for you.
