Chopmist Charlies Pasta Priscilla

Chopmist Charlies is located in Jamestown.  This is a perfect dish to make when you are wanting to cook a hearty dinner in a few minutes.  Baby spinach, diced tomatoes, sliced mushrooms, chicken breasts, and more make a healthy but hearty dinner.  This recipe is perfect for you to make in under a half an hour, and everyone will wonder if your ordered take out.

4 oz. fresh pasta, cooked al dente
3 Tbsp. olive oil 
1 oz. chopped garlic
1 Tbsp. butter
1 Tbsp. basil, chiffonnade
1 C. fresh baby spinach
1/4 C. diced tomatoes
1/2 C. sliced mushrooms
3/4 C. chicken stock (or vegetable stock)
1/4 C. dry white wine
6 oz. grilled, sliced, chicken breast
Salt and pepper to taste
Pecorino Romano for grating

Prepare pasta and put aside.

In a medium-hot sauté pan, add the olive oil, chopped garlic, and sliced mushrooms. Sauté until garlic starts to turn golden brown, then add white wine and reduce the liquid in the pan by half. Add the tomatoes and stock and let the flavor simmer for 3 minutes. Add butter, grilled chicken, baby spinach, and salt and pepper to taste. When the spinach has wilted and turned a dark green toss the cooked fresh pasta with the sauce, adding the fresh basil. Pour pasta into a bowl and top with fresh shredded Pecorino Romano cheese.
