While both blue cheese and gorgonzola are extensively used in cooking, gorgonzola has a unique taste and appearance. You could substitute gorgonzola for blue cheese if that is all you have.

First off, let’s be clear that homemade salad dressing tastes amazing, and no matter what you choose you will create a better than the bottled variety of salad dressing. Here are some common types I suggest using. My personal favorite is Danish blue cheese.

  • Roquefort – this has a more robust flavor than Gorgonzola. It is trendy to enjoy on a cheese plate. This makes a good salad dressing if you want a tangy salad dressing.
  • Stilton – this has a stronger flavor than Gorgonzola. It has a strong smell and taste. This can make your salad dressing smell off, I would not recommend using this if you are going to store your salad dressing for more than one or two days.
  • Gorgonzola – this is made from unskimmed cow’s milk. It is soft, crumpy, and has a sharper flavor than Danish blue cheese.
  • Danish – this is a milder blue cheese that is made with full-fat cow’s milk. It is semi-soft and a good choice for salad dressing.
  • Amish – made from cow’s milk, this has a mild and well-balanced flavor. If you can find it, I find it a good choice for salad dressing.
  • American – one popular variety is Maytag blue cheese. It is made with homogenized milk. It has a well-balanced flavor and is also excellent for salad dressing making.

Homemade is so much better than store-bought because it is made with simple ingredients:

  • Blue Cheese – Maytag, and other blue cheeses made in the USA are perfect for this recipe. They are creamy, and have the right amount of sharpness.
  • Sour cream – makes the dressing creamy
  • Mayonnaise – if you have access to Duke’s mayonnaise, it packs a lot of flavors, my second favorite is Hellman’s or Best Foods (it depends on where you live.)
  • Dry mustard – gives the dressing some edge
  • Garlic powder – garlic powder is dried ground-up garlic, so it gives flavor without salt
  • Worcestershire sauce – the secret ingredient of many recipes, it adds the perfect punch of flavor.
  • Salt and pepper – add to your personal preference

How to Make Blue Cheese Dressing

Here are the simple steps for making this copycat recipe:

  1. Place sour cream, mustard, pepper, salt, garlic powder, and Worcestershire in a small bowl and blend with a mixer for 2 minutes at low speed.
  2. Add mayonnaise. Blend 1/2 minute at low speed and 2 minutes at medium speed.
  3. By hand, crumble the cheese into the mixture. Blend at low speed for no more than 4 minutes.
  4. Refrigerate 24 hours before serving.

    I’ve made this twice now and it is the best recipe I have found so far. Takes me back to being a kid when my grandmother introduced me to blue cheese dressing over a wedge of iceburg with bacon crumbles and fresh summer tomatoes. Amazing!

    I’ve been making this recipe now for 50 years since I first had it at the Chart House in Simsbury, CT (sadly lost in a fire because it was a special one). I’ve probably made it hundreds of times over the years. I think I may even still have the little blue card they used to give out with the recipe (they had one for thousand island dressing as well as their mud pie). I’ll never forget the simple menu they gave you that was on the cutting board. The only thing I see wrong is the mayonnaise — the original recipe is for 1-1/3 cup of mayo, not 1-1/2. It probably won’t make difference, but thought I might mention it. But thanks for letting others know about this amazing dish.

    Best blue cheese dressing , I’ve ever had and made. If you don’t have all ingredients you can substitute different types ones, but not cheese, Mao or sour cream!!! But stick to basic ingredients. I add a little chopped garlic and more blue cheese. (use real garlic instead of garlic salt)

    Me and my mom (and the rest of the family as well) LOVE blue cheese dressing…we came up with a great recipe that doesnt use mayo….(my father despises mayo)

    1 package Italian Dressing Seasoning Mix
    1 Large Tub Sour Cream
    1 package crumbled blue cheese

    mix all ingredients – add a BIT of water because mix will be quite thick…YUM
