Whole chickens are an inexpensive way to cook dinner. This recipe is one you can experiment with and try out other spices and herbs once you get the technique down for making compound butters.

Compound butters are often served in nicer restaurants, but they are very easy to make. A compound butter is where you mix butter that is at room temperature and you mix in other herbs and spices. This is a very easy way to make something simple taste very delicious.
Yield: 6 servings.
4 Garlic clove — minced
6 Tbsp. Butter
1 tsp. Salt
1 Tbsp. Black Pepper
1 broiler chicken — split in half
Blend first four ingredients. (I do it in my food processor). Spread butter on chicken halves. Broil four to six inches from heat for 13 to 16 minutes per side, basting frequently.
