Barbeque Chicken Packets – an easy to make main dish, that virtually no clean up.
These taste great, and there is very little to clean up. You can make these ahead of time by a few hours. One of the outstanding points of this recipe is that you can simply get these wrapped up and pop them into the oven and you have a full meal. You may even want to be creative on this recipe by adding chopped potatoes, onions, or even a touch of garlic. You can also grill these foil packets outside on the grill.
4 sheets aluminum foil
4 skinless, boneless chicken breasts halves
1 C. barbecue sauce
1 can whole kernel corn drained or one package frozen corn
1/2 C. chopped or sliced green bell pepper
Preheat oven to 450 degrees. Center one chicken breast half on each sheet of aluminum foil. Spoon barbecue sauce over chicken. Top with vegetables. Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat circulation inside pocket. Repeat to make four packets. Bake 18-22 minutes. You can also do this on the barbecue.
