Food courts in malls serve up a wide variety of food. In so many malls cajun food is one of the types of food that is served. What makes this sauce special is brown sugar, bourbon, Ketchup and a variety of seasonings. You can use this on a variety of meats such as steaks and chicken breasts. This makes a wonderful basting sauce, but be sure to save some to dip your meat in.

Rajun Cajun Barbecue Sauce
Rajun Cajun BBQ Chicken
Often found in the food courts, this recipe contains bourbon unlike that of your local mall.
Ingredients
- 1/2 cup Dark Brown Sugar plus 1 tablespoon
- 1/2 cup Blended Bourbon
- 1/2 cup Heinz Ketchup
- 2 teaspoons Liquid Smoke
- 1 clove garlic mined
- 1 tablespoon minced Onion
Instructions
In a saucepan combine brown sugar, and bourbon. Turn heat to medium and mix well. Add Ketchup and remaining . Stir until all is well blended. Heat through for about 15 - 20 minutes. You want to make sure the alcohol cooks away. You can use this as a basting sauce for BBQ, or you can spoon it over chicken breasts and pop those into a 400-degree oven covered for about 30 minutes. You can also prepare this with wings for a great change on hot wings.
