Kathy Perez Roast – A roast that is perfect for any Sunday afternoon.
Growing up all over the mid west meant I got to try a great variety of different styles of cooking. Kathy Perez was a friend of my Mom’s that was a fantastic cook. Her recipe for roast has many simple ingredients that when melded together make for a wonderful roast. Celery, carrots, and onions really enhance a roast. One of her special tricks for making a delicious roast was cook the vegetables in butter before serving them. Browning your roast in butter also really sears the meat keeping the final roast nice and juicy.
3-4 lb. beef roast
2 bay leaves
1 C. celery, sliced
2 C. carrots, sliced
1 medium onion, sliced
1 medium can tomato juice
Salt and pepper to taste
1 tsp. garlic salt
3 bouillon cubes
2 Tbsp. Worcestershire sauce
1/2 stick butter
Preheat oven to 350 degrees. Sauté celery, carrots, and onions in butter. Take from pan. Rub meat on both sides with seasonings. Cut slices in meat to ensure that it is seasoned well. Brown meat on both sides in the remaining butter. Add vegetables, juice, bouillon cubes and bay leaves. Cover and bake and until done.
