Parsley Rice
3/4 C. thinly sliced green onions
2 to 3 Tbsp. vegetable oil
1 C. uncooked regular rice
1/2 C. minced green pepper
1/4 C. minced fresh parsley
2 C. chicken broth
1 tsp. salt
1/2 tsp. pepper
2 to 3 Tbsp. vegetable oil

Saute onions in hot oil in a large skillet until tender. Add remaining ingredients; cover and simmer 20 minutes or until liquid is absorbed and rice is tender.
