La Comedia Sweet Potato Souffle
This recipe was sent in by a fellow viewer. This is a most requested recipe of their local dinner theater. This is perfect for the holiday’s or anytime you are wanting to add something extra to dinner.
4 C. Mashed Sweet Potatoes
1 C. Sugar
2 Eggs
1/2 C. Milk
1/2 tsp. Salt
1/3 stick Butter or margarine (melted)
1 tsp. Vanilla
Topping
1 C. Brown Sugar
1/2 C. Flour
1/3 C. Butter or Margarine (melted)
1 C. Pecans
1 C. Sugar
2 Eggs
1/2 C. Milk
1/2 tsp. Salt
1/3 stick Butter or margarine (melted)
1 tsp. Vanilla
Topping
1 C. Brown Sugar
1/2 C. Flour
1/3 C. Butter or Margarine (melted)
1 C. Pecans
Mix together sweet potatoes, sugar, eggs, milk, salt and 1/3 stick of melted butter. Pour into a buttered pan. Mix together all topping ingredients and crumble topping evenly over potato mixture. Bake at 350 degrees for 35-45 minutes uncovered.
