Burbank’s Sweet Potato Casserole
This recipe was generously sent in by a fellow viewer, Stephanie Ziegler. This is a fantastic sweet potato casserole.
3 cups cooked mashed sweet potatoes
1/2 c. white sugar
2 eggs, beaten
1/2 tsp. salt
1/2 stick margarine, melted
1/2 c. raisins (optional)
1/2 c. milk
1-1/2 tsp. vanilla
1/2 c. light brown sugar
1/2 c. flour
1 c. chopped nuts
1/3 stick margarine
1/2 c. white sugar
2 eggs, beaten
1/2 tsp. salt
1/2 stick margarine, melted
1/2 c. raisins (optional)
1/2 c. milk
1-1/2 tsp. vanilla
1/2 c. light brown sugar
1/2 c. flour
1 c. chopped nuts
1/3 stick margarine
Mix first eight ingredients together and place in 9×9 glass pan. Mix remaining ingredients and spread on top of potato mixture. Bake at 350 degrees for 15 minutes, or until heated through. Recipe may be doubled. Enjoy!

the only difference between Burbank’s and La Comedia’s sweet potato casserole is 1C mashed sweet potato? That would make Burbank’s a casserole with a tad more structure because of the potato to egg ratio. I think I will make Burbank’s instead for Christmas dinner.
