Tricia’s Chicken Salad

This is a wonderful chicken salad with cranberries and apples added, they give your chicken salad a nice touch.  You can substitute the cranberries for craisins or even dried cherries.

Tricia’s Chicken Salad

Yield: 4 servings.
4 boneless skinless chicken breasts, grilled or baked
1 C. dried cranberries
1/2 C. red onion, finely chopped
1/3 C. parsley, chopped
2 Granny Smith apples, cored and chopped
2/3 C. sliced almonds, toasted
1/2 C. mayonnaise
4-5 drops Tabasco sauce
dry ranch dressing mix
Sprinkle the ranch dressing mix over the chicken and bake or grill until done. Cool and chop chicken. Put all ingredients in a large bowl. Mix Tabasco sauce and mayonnaise together and pour over salad ingredients. Toss gently. Chill thoroughly before serving.

Serve as a sandwich, over salad greens, in the hollow of a cantaloupe, or however you choose.
