This is a wonderful chicken salad with cranberries and apples added, they give your chicken salad a nice touch. You can substitute the cranberries for craisins or even dried cherries.

This salad is a wonderful lunch or light dinner!
- 4 boneless skinless chicken breasts, grilled or baked
- 1 cup dried cranberries
- 1/2 cup red onion, finely chopped
- 1/3 cup parsley, chopped
- 2 Granny Smith apples, cored and chopped
- 2/3 cup sliced almonds, toasted
- 1/2 cup mayonnaise
- 4-5 drops Tabasco sauce
- dry ranch dressing mix
Sprinkle the ranch dressing mix over the chicken and bake or grill until done. Cool and chop chicken. Put all ingredients in a large bowl. Mix Tabasco sauce and mayonnaise together and pour over salad ingredients. Toss gently. Chill thoroughly before serving.
Serve as a sandwich, over salad greens, in the hollow of a cantaloupe, or however you choose.Print Recipe
