Souper Salad Fettuccine Salad

This is a light tasting salad that tastes so good.  It is easy to prepare, and even the novice cook can put together this delicious salad. This is one of my favorites available on the salad bar. I would use light mayo if you have it. Do not use Miracle Whip.

This salad makes a great side for any meal or for a party!

Ingredients

  • 8 ounce Fettuccine
  • 1/2 cup Mayo
  • 1/2 cup Frozen Corn
  • 1/4 cup Grated Parmesan Cheese
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Fresh Cracked Pepper
  • Salt to taste

Instructions

Cook pasta according to directions. Drain. Mix pasta and corn in a bowl. Mix together the mayo, cheese, garlic powder, and pepper. Combine the pasta, and sauce, and mix well. Salt to taste. This is best if refrigerated for a couple of hours before serving.

    Do you use the canned parmesan cheese or “real” parmesan cheese?

    Don’t forget about the green onion! I had this salad there before they closed down (a few months ago in Austin, Tx, anyway) and it also has a little chopped green onion tops.

    My husband loves this recipe and NO the corn is used right out of the bag! I use corn right out of the bag and it is frozen. WE BOTH LOVE IT!!!!!

    I only used 1/2 tsp pepper and I thought it was way too much! Next time (and I will definitally make it again!) I will use only 1/4 tsp and maybe add a little more garlic.

      Nope, use the corn right out of the bag, do not cook it first.

    Souper Salad uses a generic commercial vegetable base in powder form to season most of their pasta salads. It’s why no one can figure out the secret.

    This is probably a silly question, but do you cook the frozen corn??

    In this copy cat recipe, you do not need to cook the corn, the corn is used right out of the bag. ~Stephanie

Although everything else at Souper Salad is good too, this is my absolute favorite; it is the most amazing dish they serve. I am so grateful to have found your website.     thank you soooo much!! i lived in texas a few years ago and was a Souper!Salad! addict!!! this was my all time fave thing they had, and since moving back to indiana, i swear i wake up craving this dish! i tried to make it so many times, thinking it was simply noodles, mayo and corn, but it just never tasted the same… i think its the parm and pepper that will change it and an actual measurement to go by. i am trying to make it tonight and im sure it will go much better. thank you so much for posting this yummy crave dish. ill never miss texas, but i will always miss souper salads!
