Looking for a great change for dinner. This is a light, yet fulfilling dinner. This is a hearty salad filled with mushrooms, garbanzo beans, cherry tomatoes, cucumber and more.

Meal in a Bowl

4 C. mixed Salad Greens
1 (15.5 oz.) can Garbanzo Beans, drained
1 C. sliced Fresh Mushrooms
1 C. Cherry Tomatoes, halved
1 small Cucumber
1/2 small Red Onion, sliced into thin rings
1/2 C. Coarsely chopped Walnuts
3 large hard cooked Eggs, cut into wedges
Avocado Dressing – See Below
Layer first seven ingredients in a large glass bowl, arrange hard cooked eggs on top. Serve with Avocado Dressing.

Avocado Dressing
1 large Avocado peeled, seeded, and mashed
1 (8 oz.) container Sour Cream
2 Tbsp. Lemon Juice
2 cloves Garlic, pressed
1/2 tsp. Ground Cumin
1/4 tsp. Salt
1/4 tsp. Ground Red Pepper

Combine all ingredients, cover, and chill. Avocado Dressing doubles as a dip for fresh veggie or chips.
