The addition of cottage cheese and pecans makes for a fine gelatin salad. This isn’t too sweet and is perfect for a meal.

Furr's Light Green Jell-O Salad

This salad is a wonderfully sweet addition to any meal!


  • 2 Box Lime Gelatin (3 ounce)
  • 1 Can Crushed pineapple 20 ounce (drained)
  • 16 ounce Carton Small Curd Cottage Cheese
  • 1/4 cup Pecans (very finely crushed)
  • 1 Carton Whipped Topping 8 ounce (Cool Whip)
  • 2 cups Boiling Water
  • 1 cup Cold Water


In large mixing bowl empty gelatin. Add the two cups of boiling water and stir until gelatin is dissolved. Pour 1 cup cold water into mixture and blend. To mixture add drained crushed pineapple, cottage cheese, and whipped topping. Stir mixture until whipped topping is smooth and blended, there should be no large lumps of topping. Pour into a 13" x 13" pan and sprinkle nuts on top, chill until set.

    I make this, jello water can pineapple with juice and 2 tbsp. Sugar , boil 1 minute, chill til jelled add cottage cheese ,cool whip and chopped walnuts, comes out perfect every time!

    Mama’s Green Christmas Salad was similar, but she used 16 oz. cream cheese (mixed with jello water) in place of cottage cheese. Let jello cheese cheese mixture partially set (chilling in fridge). Then gently folded in pineapple, drained. Cover top with miniature marshmallows and chopped pecans. Back to fridge to solidify overnight. She always insisted we had at least one ‘green’ vegetable with dinner, be it beans, peas, greens, or salad. We kids called this our ‘greens’ and ‘salad’ and would ‘convince’ Mama we were being doubly good, because of Christmas. Yeah, Mama knew, even though she tried to act ‘put-out’ with us. Remember…she made it for us, made sure it was ‘green’ and called it ‘salad’… {]:< ] ~

    If you follow the recipe and DRAIN the pineapple, you will have no problem.

    You can not use pineapple juice and jello together. Pineapple juice prevents jello from setting up.

    I used the pineapple juice as part of the 1 cup cold water and it did not gel. Also I think maybe it would gel better if jello was chilled a little before adding the remaining ingredients.
