This chopped chicken salad is a wonderful way to use left over cooked chicken. Combine with pasta, bacon, and fresh vegetables for a delicious dinner.
Chopped Chicken Salad
Yield: 8 servings.
1 7 oz. package of pasta rings (small), cooked and cooled
3 c. cooked chicken, cut into 1/2″ cubes
1/2 lb. bacon, cooked until crispy, crumbled
1 bag Dole Italian lettuce mix (20 oz.), or use romaine
2 large ripe tomatoes, diced into 1/2″ pieces
1/4 c. diced green onion
1/2 c. feta cheese, crumbled
1 16 oz. bottle Henri’s Honey Mustard dressing
pepper
parmesan cheese
Chop the romaine or lettuce mix into small pieces. Mix all ingredients, adding enough dressing to coat, about 1/2 to 3/4 of the bottle. Serve with grated parmesan cheese and pepper.

I take a 1 lb. package of bacon and cut as much of the fat off as possible and end up with 1/2 lb. We like Henri’s honey mustard dressing because it is fat free and milder than some of the others. My daughter doesn’t like a heavy mustard flavor. You could use your own favorite honey mustard dressing. Our daughter had a friend over for dinner last night who has never had this salad. She immediately asked for the recipe so she could give it to her mother.
