Afternoon Delight is located in Ann Arbor, MI. Afternoon Delight is known for many of their tasty dishes, don’t miss out on this recipe that is so close to their Clam Chowder, this recipe isn’t top secret anymore.
2 Tbsp. Butter
2/3 C. Celery diced
2/3 C. Onion diced
2 C. Potatoes diced
1 clove Garlic minced
2 1/2 C. Hot Water
1 oz. Clam Base
2 – 3 C. Hot Water
7 oz. chopped Clams with Juice
1 Carrot peeled and grated
1 pint half and half
Roux of 1/2 C. Butter, and 1/2 C. Flour
Saute celery, onion, and garlic in the 2 Tbsp. butter. Add potatoes and water, and simmer for 30 minutes. Add clam base, a pinch of thyme, salt, pepper, and hot water. Simmer for 15 minutes and add clams and carrot. Simmer 15 minutes and add half and half and water. Heat through until simmer. Meanwhile make a roux out of the 1/2 C. butter and the 1/2 C. flour make sure that the flour cooks through before adding this to the simmering soup.

  1. What is "crab base"? Where does one get it? It’s not in any of the grocery stores here.

    • Penzeys.com has many types of soup bases, more and more grocery stores are starting to get a variety of soup bases in them. They work out much better than boullion cubes when seasoning soup.
