Original Sicilian Pasta Co. Bruschetta Spread
In the 70-80’s I owned a chain of restaurants in the Los Angeles area called The Original Sicilian Pizza Company. I have since sold the restaurants and the last one closed in 1988. These are some of the recipes that I had on my menu.
12 Red Bell Peppers — Peeled And Seeded
2 C. Kalamata Olives — Pitted And Chopped
4 Tbsp. Olive Oil
Fresh Ground Black Pepper to Taste
Roast, peel, seed and chop the bell peppers. Combine the roasted bell peppers, olives, olive oil, and pepper in a bowl. Stir and allow to rest for at least 15 minutes for the flavors to blend. NOTES : Options. Add a few cloves of crushed garlic, or some fresh chopped rosemary to the spread. Soak olives in olive oil to remove some of the salty taste. The Olive oil can then be used in salad dressing.
