Caramel Popcorn

Caramel popcorn is a real treat, and best of all you can make caramel popcorn at home. It is easy to do. 
Caramel popcorn is a wonderful treat for those who like it salty and sweet.

Growing up I have fond memories of this recipe. This is my Mom’s recipe for caramel corn. Typically she made it for the holidays and then packed it into tins and gave it away. This was one of the many treats she would make during the holidays. Homemade Caramel popcorn is buttery much more so than your average boxed variety.

This is a tried and true recipe that I hope you enjoy.

Ingredients

  • 3 quarts freshly popped popcorn
  • 1/2 cup chopped pecans
  • 1/2 cup butter
  • 1 cup firmly packed brown sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla 

Instructions

  • Combine popcorn and pecans in a lightly greased jellyroll pan; mix well and set aside. Melt butter over low heat in a medium saucepan. Add brown sugar, corn syrup, and salt; bring to boil, and boil 5 minutes without stirring. Remove from heat, stir in baking soda and vanilla. Pour syrup over popcorn mixture stirring until popcorn is evenly coated. Bake at 300 degrees for 30 minutes, stirring after 15 minutes. Cool completely and break into small pieces. Yield: 12 servings

    I was hoping to find a copycat recipe for Applebee’s Veggie Patch Pizza – there is a special blend of cheese that they use on their spinach artichoke dip for the pizza that I just can’t place. I’ve never really used any of the higher end cheeses because I haven’t had the need. However, looking at your recipe for the Longhorn mac and cheese makes me think that you will know exactly what they’re using…at least I hope! I can’t wait to try the Longhorn mac and cheese, btw.
