Lunch Box Oatmeal Cookies
These oatmeal cookies are a favorite of mine, this recipe is from Ethel Eynard, Jefferson, City MO, 1998.
1 C. Flour
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 C. brown sugar
1/2 C. white sugar
2 eggs
1 Tbsp. water
1 tsp. vanilla
1 1/2 C. rolled oats
1/2 C. shortening
1/4 tsp. salt

Preheat oven to 350 degrees. Sift flour, salt, baking powder, and baking soda together in mixing bowl. Add remaining ingredients except the oats. Beat until smooth about two minutes. Fold in oats and shape into small balls on a cookie sheet. You can sprinkle on nuts or raisins if you desire. Bake for about 10 to 12 minutes.
