Lunch Box Oatmeal Cookies

These oatmeal cookies are a favorite of mine. My grandmother used to make these oatmeal cookies all of the time, she was quite the baker.  This recipe is from Ethel Eynard, Jefferson, City MO, 1998.

Lunch Box Oatmeal Cookies

1 C. Flour
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 C. brown sugar
1/2 C. white sugar
2 eggs
1 Tbsp. water
1 tsp. vanilla
1 1/2 C. rolled oats
1/2 C. shortening

Preheat oven to 350 degrees. Sift flour, salt, baking powder, and baking soda together in mixing bowl. Add remaining ingredients except the oats. Beat until smooth about two minutes. Fold in oats and shape into small balls on a cookie sheet. You can sprinkle on nuts or raisins if you desire. Bake for about 10 to 12 minutes.
