Ice Box Cookies

These cookies are wonderful easy to make cookies. Ice Box cookies are perfect for when you want to bake cookies in a hurry, this dough needs to be chilled before using. This recipe came from my former husband’s Grandmother, and we ate lots of these cookies over the years.

Ice Box Cookies


Prep Time: 20 minutes
Cook time: 40 minutes


1/2 cup Margarine 

1 cup Sugar

2 teaspoons Vanilla

1 Egg 

1 3/4 cups Flour

1/2 teaspoons Baking Soda

1 1/2 teaspoons Salt

1/2 cups chopped Nuts (optional)


Cream butter and sugar until light and fluffy. Add vanilla and egg and bean until blended. Sift dry ingredients together, and add nuts if desired. Gradually add to sugar mixture stirring after each addition. Shape into long rolls on waxed paper. Chill in refrigerator for several hours. Slice into 1/8 to 1/2 inch think. Bake on an ungreased cookie sheet at 400 degrees for about 7 minutes. You can also make pinwheels by dividing dough into two equal sections, add food coloring of your choice, and roll out even sections of the two colors of dough.
