Strawberry Bread

Strawberry bread is made with frozen strawberries, and served with a cream cheese infused the sweet strawberry liqueur from the frozen berries. Not intentionally, but this bread is vegan, this bread is made with vegetable oil, and not butter. The texture is slightly crumbly, but it is a dense rich bread.

This came from a lady who I used to work with many years ago. In college one of my jobs was working the video department in a grocery store. Carole was the grocery manager, she was full of wit, and could really cook. Here is her strawberry bread, it was always gobbled up at get togethers with other co-workers. While Carole may not be around anymore, her fabulous strawberry bread can be made anytime.

3 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon cinnamon
1 cup vegetable oil
2 10 ounce containers of frozen strawberries
1 8 ounce package cream cheese, softened
Mixing Strawberry Bread 
Thaw strawberries and reserve 1/2 cup liquid. Combine all dry ingredients and mix well. Make a well in the flour mixture and pour all liquid ingredients into it. Mix by hand. Grease and flour 2 8′x4′ loaf pans. Pour mixture into pan and bake at 350 degrees for 1 hour or until toothpick is inserted and comes out clean.

Add strawberry juice to cream cheese for spread. Serve spread on the side or the loaves may be sliced and cream cheese may be placed into the layers.

    I made this bread and was suprised the way it turned out. I thought the bread bould be white but it is dark brown. Actually, it reminds me of a spice cake. It’s tasty and all, but not what I expected.
