This is a tasty casserole. This was sent in by a fellow list member! This is one of her family recipes. This casserole re-heats up very well, so this is perfect to reheat during the hectic week. This recipe is filled with rice, ground beef, and bacon, what could be so better? This tastes even better with a little grated cheese if you have some on hand.

Seven Layer Casserole
This is easy to make and very tasty!
Ingredients
- 1 cup rice, uncooked
- 1 cup canned corn drained
- salt and pepper to taste
- 2 cans 8 ounce tomato sauce
- 6 ounce water
- 1/2 cup onion, chopped fine
- 1/2 cup green pepper, chopped fine
- 3/4 pound ground beef, uncooked
- 4 strips bacon, cut in half
Instructions
Place these ingredients in layers in a 2 quart baking dish with tight-fitting lid; uncooked rice then corn. Sprinkle with salt and pepper. Pour 1 can tomato sauce and 1/2 can water over first two layers. Add onion layer, then green pepper layer. Cover green pepper layer with uncooked ground beef seasoned with salt and pepper. Pour second can of tomato sauce and 1/4 cup water over all. Cover meat with eight pieces of bacon. Cover dish and bake at 350 degrees for 1 hour. Uncover and bake about 30 minutes longer.
