This is a hearty casserole filled with hamburger, sausage, onion, garlic, and chopped black olives. This casserole reheats very well so you can enjoy this one for a second meal. Recipe by Virginia McDowell. Jefferson City, MO. 1980.

Hamburger and Corn Casserole
This casserole is great for a family dinner the kids will love it!
Ingredients
- 1 pound Ground Beef
- 1/4 pound Pork Sausage
- 1/4 cup chopped Onion
- 1 clove Garlic, finely chopped
- 20-24 pitted ripe Black Olives
- 1 (16 ounce) can Whole Tomatoes
- 1 (16 ounce) can Whole Corn, drained
- 1 1/2 teaspoon Salt
- 1 cup Milk
- 2 teaspoon Chili Powder
- 1 cup Cornmeal
- 2 Eggs, well beaten
- 1 cup Cheddar Cheese
Instructions
Cook ground beef, pork sausage, onion, and garlic until meat is browned; drain. Stir in tomatoes with juice, drained corn, olives, chili powder, and salt. Heat to boiling. Pour into an ungreased 9 by b9 inch baking dish.
Mix cornmeal, milk, eggs; pour over meat mixture. Sprinkle with Cheddar cheese. Bake at 350 degrees for 40 to 50 minutes or until golden brown. Makes 8 servings.
