This is a big hit at my house. I like recipes like this, I can put together a couple of casseroles, and then heat them up when we are ready to cook. What makes this recipe really good, is that you can put this together with left over ham, so this is a great recipe to use after the holidays when we so often serve ham.

Ham and Potato Casserole
Ingredients
- 26 ounces frozen hashbrowns
- 1 pound Ham slices, cut into bite-size pieces
- 1 can condensed cream of potato soup
- 1/2 teaspoon Pepper
- 1/4 cup Parmesan cheese
- 1 cup shredded cheddar cheese
- sprinkle of paprika
Instructions
- Combine potatoes, ham slices, soup, and pepper in a large bowl. Spoon this mixture into a 13 x 9 inch baking dish. Bake at 400 degrees for 25 minutes; sprinkle with cheeses and paprika, and bake 5 additional minutes or until thoroughly heated.

Don’t know if you have ever been in the Lakeland, Fl; area but there is a restaurant called Manny’s ChopHouse that makes a mean dressing for their salad. It is served in a giant bowl for the whole table and it is delicious. If you ever try it and recreate the dressing would love the recipe. It is a ranch base to it but has garlic and lord knows what else.

Ummmmm…..how much paprika are you supposed to use?

I would do a light sprinkling, maybe a 1/4 of a teaspoon if you need to measure it.
