Gallagher’s Gingerbread

Gallagher’s is located in Ft. Worth, Texas.  They are known for their moist and spicy gingerbread.  This recipe is perfect for a holiday party.  Source Ft. Worth Star Telegram.

Gallagher’s Gingerbread

3 oz. Butter
1/2 C. Molasses
2 Eggs, slightly beaten
1/3 lb. Brown Sugar
1 Tbsp. Baking Soda
1 1/4 C. hot tap water
2 1/3 C. Flour
2 tsp. ground ginger
2 tsp. Cinnamon
1/2 tsp. Ground cloves
1/2 tsp. Allspice
1/2 tsp. Nutmeg
Howard’s sauce, recipe follows

Melt butter in saucepan and carefully mix in syrup, eggs and brown sugar. Place soda in 2-cup measure and pour hot water over it. Mix in butter-sugar mixture.
In large bowl, combine flour, ginger, cinnamon, cloves, allspice and nutmeg; stir into batter. Pour batter into greased 13-by-9-by-2-inch baking pan and bake at 350 degrees about 20 minutes or until firm. Top with sauce when cool.

Howard’s sauce:
1 stick Butter
1 Tbsp. white rum
1/3 C. powdered sugar

In small saucepan over medium heat, melt butter; add rum. Blend in sugar and spread over cool gingerbread.

    For Christmas, I made a trio of mini loaves and used this recipe as one of them.

    I’ve never had the gingerbread at Gallaghers, but this was a hit,

    I cooked it in the Pampered Chef mini loaf stoneware and adjusted the cooking time to 25 minutes.

    I didn’t do the glaze, but it was still really good.
