Over medium heat, in a 10 inch skill heat 1 inch of oil. Add 1 tortilla at a time to the oil, turning once. Cook the tortilla until lightly golden. Remove from oil and drain on paper towel. Sprinkle cinnamon sugar and drizzle 1 to 2 tablespoons of honey. Add 1 scoop of vanilla ice cream if desired. Serve immediately.
